This extension course to create chocolate sails was born from my own personal love of them - for their sculptural nature and the way they make each cake unique in personality.
They’re simple in form, stunning to look at and delicious to eat. Chocolate sails are an elegant way to dress up tiered cakes to give them structure, height and visual interest.
Whether used on their own or paired with other decorative elements, adding chocolate sails to a cake can change its entire look: from sparse and minimal to refined and distinguished or quirky and a little bit off kilter.
Who is this module for?
This module is for you if you're just starting out in cake baking and decorating and interested in this decorating technique or if you're already good at making cakes but want to get better at decorating with a new technique.
Do I need to own the CBC Foundational Module or any other CBC Online Learning Modules to understand this module?
While all the modules in the 'Cakes By Cliff Online Course' are designed to work together, you do not need to own the 'CBC Foundational Module: Buttercream Wedding Cakes' or any other of my online learning modules to buy this one and understand the contents within.
It is an independent module that does not assume any prior knowledge taken from any other of my online learning modules.
It was created to be a stand-alone learning experience, complete with all the reference guides (including full recipes, utensil list and ingredients list), video tutorials and trouble shooting questions required to successfully complete it and succeed independently to any of the other learning modules in my online course.
What does this module cover?
This extension module is all about the features of chocolate, different types of chocolate and my favourite way to create chocolate sails. There is also a 'troubleshooting' section where I help you identify where things may have gone wrong for you and discuss possible solutions. By the end of the course you should be able to confidently make chocolate sails.
It does NOT cover anything related to baking, creating and applying buttercream, preparing cakes for assembly, structure building, event preparation, marketing, pricing, client consultations or other business activity (this can all be found in the CBC Foundational Module: Buttercream Wedding Cakes which is also for sale independently or in a bundle).
All recipes, utensil and material lists, ingredients list and methodology are outlined in downloadable reference guides and you can watch me go through the chocolate sail creation process in a video.

Will this module be updated regularly?
I am always open to feedback about my online course modules and will regularly evaluate the content to ensure it is as relevant as possible. Having said that, in my experience, this particular module has few areas of focus that are likely to rapidly change or become out of date.
